Cretan Risotto/Spanakoryzo

1 kilo of spinach

2 onions finely chopped

½ cup of olive oil

200 gr of rise

Salt, pepper

Juice of one or two lemons



 We wash thoroughly the spinach and chop it. In a pot we pour the oil in medium heat and add the onions. We cook until golden. Then we add slowly the spinach and cook for 5 minutes. We add the rise, salt and pepper and we mix for a minute. We add 2 glasses of water and boil for 15 minutes. We check during that time because it may need another glass of water, depending on what type of rise you have used. When the rise is cooked the food is ready. We take out of the stove and add the juice of a big lemon on top and much more pepper. Bon appétit.
